My name is Ian and I manage Elata Farm in the Southern Highlands of NSW, where I raise pasture-fed lamb and beef, harvest raw honey, and make natural beeswax products.
Elata Farm began with a desire to produce high-quality, nutrient-dense food and connect local consumers with the farms that grow it. Most of the produce is enjoyed within 100 kilometres of where it is raised.
Everything I do is guided by regenerative farming principles — building healthy soils, supporting biodiversity, and raising animals in a way that respects their natural behaviours. I believe healthy land produces healthier food.
Alongside the produce from Elata Farm, I work with a small number of like-minded farmers across the Southern Highlands who share the same commitment to regenerative agriculture, animal welfare and quality. Together, this helps provide a consistent supply of pasture-raised produce while supporting other local farms like mine.
